It’s winter time and the eating should be, if not easy, at least fulfilling. Salmon burgers are one of my favorite memories from growing up, lo those many years ago. I make mine a little different than Mom did, but the Salmon…. oh, the Salmon!
Smoked Salmon Burgers In Paradise – Ingredients
The Fish
Smoked (use your favorite rub…) King (Chinook), Coho, Sockeye…. Salmon: 1+ pound
The Burger Mix
- Dukes Mayo: 2 Tbsp
- Eggs: 2
- Panko: 1/3 Cup
- Dijon Mustard: 2 Tsp
- Onion, diced : 1/4 Cup
- Jalapeno, diced: 1-2 per your taste
- Salt: To Taste
- Pepper: To Taste
The Spread
- Dukes Mayo: 4 Tbsp
- Seasoned Rice Vinegar: 2 Tsp
- Agave Syrup: 2 Tsp
- Dill Weed: 1/2 Tsp
- Salt: To Taste
- Pepper: To Taste
The Rest
- Great Pickles (I recommend, and can’t say enough good things about, Fire & Ice Pickles from Anclote Brew)
- Hamburger Buns
- Tomato
- Lettuce
Smoked Salmon Burgers In Paradise – Prep – Cook – Serve
So… what I am calling “smoked” does not pass the sniff test for any smoker heads in the audience. I use a pit barrel cooker with pecan chunks and a pizza stone. The temperature in the cooker is in the 275 – 325 range and the Salmon smokes/cooks for 35 minutes or so. It comes off the cooker smokey, moist and delicious. Smoke, or cook, your Salmon as you see fit. When the Salmon is done, remove and let cool on the sideboard.
While the Salmon works its way to smokey perfection, prepare the spread. Combine all ingredients and mix thoroughly.
Remove the skin from the now cooled Salmon and give it a rough chop. In a hot skillet, char the onion and jalapeno. Combine the Salmon, charred onions & jalapenos and the rest of the Patty Mix ingredients in a large bowl and stir together thoroughly.
Form 3-4 burgers, place on wax paper and place in the refrigerator to cool for 15 minutes. This helps the patties set up.
When the Salmon Burgers are set, cook them off (3-4 minutes per side, in a hot, greased, skillet. As per usual, bacon fat makes for a nice “grease” here.
Get the burgers plated and to the table. you are almost there….
