American Red Snapper (ARS) is a chefs favorite. The flesh of this species lends itself to a wide range of culinary options.
Preparing ARS with a jalapeno – cilantro lime butter, we are taking a distincly southwestern approach.
American Red Snapper with Jalapeno-Cilantro Lime Butter Ingredients
The Butter
- Butter – 1 stick, salted
- Jalapeno – 3-4, fresh
- Cilantro – 15-20 salks
- Garlic – 1 clove, large
- Lime – 1
The Fish
- American Red Snapper – 1 good sized fillet
- Butter – 4 Tbsp
- Onion – 1/3, Sweet
- Cilantro – Handful
- Spice Rub
- Cumin – 1/2 Tbsp
- Chili Lime Seasoning – 1/4 Tsp
- Chipotle Chili Powder – 1/8 Tsp
- Cimmamon – Dash
- Sugar – Pinch
The Butter
The whole things starts out with a compund butter. Bring the butter to room temperature while you are prepping the fresh ingredients.
Chop the Jalapeno, Garlic and Cilantro. Not too chunky. In an iron skillet, char the Jalapeno, adding the garlic for the last 15-20 seconds. Remove to a cool container.
Combine the Jalapeno/Garlic, fresh cilantro and lime juice with the now softened butter. If you like, roll the concoction into a log as shown above for storeg and re-use.
The American Red Snapper
Powder the fillet on both sides in prep for the skillet
Bring your skillet to medium, add 1/2 the butter and sear the snapper, 2 minutes each side.
Remove the Snapper from the grill, add the rest of the butter and the onion. Saute the onion for 2 minutes.
Return the Snapper to the skillet along with the cilantro. Let the pan come to heat mixing the pan ingredients together and spooning over the top of the fish.
