So, its Lobster Season here in Florida, my favorite season of the year. Florida Spiny Lobster is very tasty and fun to catch. There are a million easy ways to cook up these tasty bugs, my favorite is the Florida Lobster Roll. Traditionally these are made with Maine Lobster, here is our take Florida style.
- Florida Spiny Lobster – I used 4 smaller tails (cook to your liking – steamed, baked or grilled) I steamed with Old Bay and salt.
- Mayonaise
- Key Limes
- Avocado
- Scallions or Chives
- Cilantro
- Old Bay & Salt to taste
- Sub rolls – I prefer soft style more like a big hot dog bun
Key Lime Avocado Aioli
Mix this up first. I used my food processor to thoroughly blend – but a fork does the job too. Mix together 1/4 cup of mayo, 1 avocado, 4 limes juiced, finely chopped cilantro and salt to taste. Super easy and a great light taste that compliments the lobster very nicely. This is used as a spread on the bread. So keep it separate.
Florida Lobster Roll
Roughly chop up the cooked Florida Spiny Lobster and a second avocado. I like bigger chunks – chop it to your liking. Then take 2-3 tablespoons of mayo, more finely chopped cilantro, scallions and a couple of key limes juiced and mix it up thoroughly. Then gentle toss the lobster and avocado chunks into mix. I keep the mayo to a minimum, just enough to keep it mixed together. Take the sub rolls and cut them in half. Spread butter and like a little garlic salt to enhance it and toast it under the broiler. Take the toasted roll, spread the Key Lime Avocado Aioli on each side, I added lettuce first then generous amounts of the lobster mix and done. YUMMY!
